Fashion Tips
Oct 27
Fit is King – The most dramatic improvement you can make in your style is to make sure everything fits. Most guys wear clothes that are too large. Make sure everything you wear is almost hugging the curves of your body – without being tight. Bad fit is an epidemic, cure yourself.
Keep it simple – You want a wardrobe that looks great on you but you don’t want to overdo it. For example, don’t wear more than three pieces of jewelry or more than three colors. Don’t dress like a rock star unless you’re in a band. If you want to be flashy, a simpler but stylish look would be sporting a black striped dress shirt with a white blazer, a dark pair of jeans, a white belt, and your favorite pair of shoes. You could also add a flashy watch or a simple accessory like an interesting necklace, but nothing more.
Confidence
Oct 22
These are some quotes that other people have said regarding confidence:
Confident people have a broader sphere of influence, and earn more loyalty and respect than those who just use bravado.”
If what you’re seeking is lasting relationships, long-term success and quality of life in all areas then you will be better served to forego the pompous acts of the arrogant for the humility and quiet confidence displayed by true leaders.”
Confident people are totally okay with other people knowing nothing about what they have accomplished.”
The truth is that being an arrogant person may serve you in the short term, it rarely relates in lasting relationships built on a foundation of loyalty and trust. Arrogant people will usually find themselves surrounded by lots of fair-weather friends who try to exploit them for things, but at the first sign of trouble all you will see is their backs as they run for the hills.”
I think you can always tell how confident a person is about themselves by the way they respect or treat the ‘little people,’ they never look like they are trying hard to impress other people, and never put others down around them to come out the better person.”

Where the world is going…
Serves 4
Ingredients
- 4 tbsp Olive oil
- 200g cherry tomatoes
- 80g pitted, drained black olives
- Salt and freshly ground black pepper
- ½ bunch coriander, leaves only
- ½ bunch basil leaves
- 1 lemon, juiced
- 12 scallops (hand dived if you can get them), coral removed.
Method: How to make pan-roasted scallops with tomato and herb salsa
1. First, place a small saucepan over a gentle heat and add 3 tablespoons of olive oil. Chop the cherry tomatoes in half and add to the oil. Add the pitted black olives, season with salt and freshly ground black pepper and stir over a low heat for 1-2 minutes. Remove from the heat and set aside.
2. Hold the stalks of the coriander and basil together and slice down with a sharp knife to shave off the leaves. Discard the stalks, gently roll the coriander and basil leaves into a ball and chop. Add the coriander and basil to the salsa and stir to combine.
3. Roll the lemon on a chopping board to soften it and release the juices and then chop in half. Add the juice of half a lemon to the pan, stir and set the salsa aside to allow the flavours to infuse.
4. Heat a large non-stick frying pan over a high heat until smoking hot and then add one tablespoon of olive oil. Lay the scallops out on a board, pat dry with kitchen paper and then season one side with salt and pepper.
5. Think of the frying pan as a clock face and add the largest scallop (seasoned side down) in the twelve o’clock position. Continue adding the scallops clockwise working your way round 1,2 3 etc until you get to 12 again. Season the unseasoned side of the scallops and after 1-2 minutes or when the underside is turning golden brown, with a palette knife or spatula, flip over the scallops starting with the scallop you placed in the twelve o’clock position. Squeeze the other half of the lemon over the scallops and give the pan a good shake to ensure even cooking.
6. After 1-2 minutes or when the scallops are golden brown on all sides, tip the pan onto a plate lined with kitchen paper to absorb the excess oil.
7. To serve, lay out four small plates and place a large spoonful of the salsa in the middle of each plate, arrange 3 scallops on each plate and serve immediately.
Truly Great Man
Oct 10
The truly great man knows he is great, but doesn’t feel he has to prove it. He doesn’t parade himself around like some beyond-human guru. He is subtle. In a disagreement, he will let you have the upper hand. He will make you feel better about yourself because he doesn’t need to belittle others to inflate his self esteem. But while he is humble, he has a certain air of confidence, what the French describe as “je ne sais quoi” (I don’t know what).
When you’re remarkable, you know it. But you also know you put your pants on the same way as everyone else.
Highly Remarkable Men
Oct 6
Have you ever heard someone speak and felt compelled to soak up every word? You just want to know them, be around them and learn from. That’s the mark of a remarkable person.
While some people are born with an enigmatic quality, most people become that way willfully. Many highly charismatic, magnetic people didn’t get that way by accident. They didn’t stumble upon greatness; they became great deliberately.
I’ve learned that there are certain traits that can be studied, practiced and learned that will make you remarkable. But before I get into that, I should warn you that the path of the outstanding man is not the smoothest or most gentle. Timidity and shrinking has no place in the path of greatness.
Gattaca – movie
Oct 4
The story is set in “the not-too-distant future”, a chilling expression which infers that its author is certain that not only people are evolving towards the society described in his visionary film, but also that it is happening very fast. In this future, most children are perfectioned via genetic manipulation while still embryos. Segregation in all ways of life is not based on gender or ethnicity any more but on genetic material. Those born naturally, either because the parents could not afford or refused scientific intervention, are the new underclass. Vincent is one of them. His dreams, his passion and ambition for space travel are doomed to failure because no matter how hard he works and studies, no employer will hire an ‘invalid’ as anything else than a cleaner. However, his determination seems boundless and he is ready to attempt anything to challenge his fate.
The Good: Logitech’s Z-5 PC speakers offer decent sound for a reasonable price; omnidirectional acoustics; USB connectivity obviates need for bulky power adapter; compatible with Mac and Windows PCs; included remote allows you to control playback of music from across the room; auxiliary input for connecting to non-PC audio sources.
The Bad: Little light on the bass; no volume control on speakers themselves.
The Bottom Line: While we weren’t blown away by their sound, the Logitech Z-5s’ combination of a simple, clean design, USB connectivity, and some basic remote operation make them a decent value in the sub-$100 PC speaker space.
Serves 4
Ingredients
- 4 British rose veal escalope, about 170g each and 1 cm thick
- Approx 120ml Marsala
- 15g butter
- 2 large banana shallots, finely sliced
- 80g mushrooms, sliced
- 300ml chicken stock
- 2 medium tomatoes, peeled deseeded and diced
- 1 tbsp chopped chervil
- 2 tbsp chopped tarragon
- Olive oil
- Sea salt and freshly ground black pepper
For the sautéed vegetables:
- 1 red pepper, cored and deseeded
- 1 yellow pepper, cored and deseeded
- 1 medium aubergine, trimmed
- 1 courgette, trimmed
- 1 garlic clove, (unpeeled) smashed
- Few thyme sprigs
- Splash balsamic vinegar
- 1 tbsp flat leaf parsley, chopped
Method: How to make veal Marsala with sautéed vegetables
1. Season the veal escalopes with a little salt and pepper on both sides. Heat a little olive oil in a heavy based pan. Quickly sauté the veal on both sides (you may have to do this in batches if your pan isn’t big enough) remove the meat and set aside to rest. Keep warm.
2. Bring the same pan back up to temperature and add the butter. Add the shallots and mushrooms and sauté for 2- 3 minutes until softened. Add the stock, season and add a splash of Marsala and allow to reduce.
3. Chop the vegetables into 2cm pieces. Heat 3 tablespoons of olive oil in another large pan. Lightly fry the garlic then add the peppers, aubergine and thyme and fry over a high heat for 3-4 minutes. Add the courgette. Season with salt and pepper and sauté for 2 minutes until the vegetables are just tender. Take off the heat and dress with the a little olive oil and balsamic vinegar; check the seasoning. Finally add the parsley and keep warm until ready to serve.
4. To finish the Marsala sauce mix through the diced tomatoes, chervil and tarragon. Return the veal back to the pan and spoon the sauce over the top to heat it through.
5. Spoon the sautéed vegetables onto warm plates. Lay the escalopes on top of the vegetables and spoon over the Marsala sauce.
